The Grappa

We have chosen the traditional “bain-marie” method, a very artisan distillation method for our Grappa. It is of particular importance that our fresh pomace from the BALZE D’ISTRICE is distilled immediately to extract the precious aromatic substances and the delicate perfumes to ultimately attain the quality we are aiming for. The so called ‘discontinued’ method, which requires constant attention during the distillation process, is being performed with much professionalism, passion and care by the distillery Alboni in Colle Val d’Elsa.

The barrique aged Grappa BALZE D’ISTRICE is being kept in our own oak barrels – the very same barrique which were previously used for our wine.
